They both give pretty much the same results.<br /><br />I usually cut my pancetta into 4 oz. chunks, vacuum seal it and then put it in my freezer. It will keep for well over a year. If you vacuum seal it and put it into the fridge it will last for several months. (Use the "smell test" to make sure it's still good.) If you just store it in the fridge in a plastic bag, it will probably stay good for 4 to 6 weeks.<br /><br />Hope this answers your questions! Pancetta can be a wonderful thing! Lately, we've been using it as an ingredient in authentic Bolognese sauce and it brings it to a whole new level. We've even got compliments on it from someone from Bologna. I believe I gave the recipe for that in a post a while back.
